Description

These easy Chicken Fajitas combine juicy seasoned chicken, colorful bell peppers, tender onions, and fresh lime. Serve them with warm tortillas and your preferred toppings for a quick 30 minute lunch or family meal.

3 boneless skinless chicken breasts

1 onion, thinly sliced

3 bell peppers, thinly sliced

2 tablespoons olive oil

1/2 lime

1/2 tablespoon chili powder

1/2 tablespoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon dried oregano

1/2 teaspoon kosher salt

1/4 teaspoon ground black pepper

Tortillas, for serving

Sour cream, for serving

Pico de gallo, for serving

Avocado or guacamole, for serving


Instructions

1. Mix the chili powder, cumin, garlic powder, paprika, oregano, salt, and black pepper in a small bowl until evenly combined.

2. Coat both sides of each chicken breast thoroughly with the seasoning mixture.

3. Heat the olive oil in a large skillet over medium heat.

4. Add the chicken and cook for 7 to 8 minutes per side, or until the internal temperature reaches about 160°F and the chicken is nearly cooked through.

5. Transfer the chicken to a plate and let it rest.

6. Add the sliced onion and bell peppers to the same skillet.

7. Cook the vegetables for 4 to 5 minutes, stirring often, until tender with lightly browned edges.

8. Slice the rested chicken into thin strips.

9. Return the sliced chicken to the skillet and toss it with the peppers and onions until heated through.

10. Squeeze fresh lime juice over the Chicken Fajitas and toss well.

11. Serve immediately with warm tortillas, sour cream, pico de gallo, avocado, or guacamole.

Notes

Cook the chicken to a final internal temperature of 165°F.

You may remove the chicken from the skillet at about 160°F because carryover heat will continue cooking it as it rests.

Use boneless skinless chicken thighs instead of breasts for a juicier result.

For deeper flavor, season or marinate the chicken before cooking.

You can freeze marinated raw chicken for a later meal.

Mixed color bell peppers give the dish the brightest presentation.

Fresh lime juice added at the end gives the fajitas a fresh, lively finish.

Serve the filling in tortillas, lettuce wraps, or rice bowls.
