Description

A quick and flavorful Chicken Zucchini Stir Fry made with tender chicken, crisp zucchini, and a savory garlic soy sauce. Perfect for busy weeknights and ready in just 40 minutes.


Ingredients

1 lb boneless chicken thigh, cut into bite-sized pieces

1 teaspoon cornstarch

1/4 cup light soy sauce

1 teaspoon sesame oil

2 teaspoons sugar or honey

1 tablespoon rice wine vinegar optional

3 garlic cloves, smashed

1 tablespoon cooking oil

1 medium zucchini, sliced lengthwise then into pieces

1 tablespoon oyster sauce

Ground black pepper optional


Instructions

1. Cut chicken into small pieces and mix with marinade ingredients until evenly coated, then let sit about 30 minutes

2. Heat oil in a wok or skillet over medium-high heat

3. Add garlic and marinated chicken with sauce and cook briefly until chicken loses its raw appearance, then remove chicken while leaving sauce in the pan

4. If needed add a bit more oil, then cook zucchini until slightly tender but not mushy

5. Return chicken to the pan, add oyster sauce and pepper, and stir fry until chicken is fully cooked and zucchini is tender

6. Serve immediately

Notes

Chicken can be marinated up to 24 hours ahead and kept refrigerated

Leftovers keep in the fridge up to 3 days in an airtight container

Reheat in a pan for best texture or microwave in short intervals though zucchini may soften more

Freezing is not recommended as zucchini becomes mushy and sauce may separate

Dish can be made spicier with chili, chili oil, or hot sauce

Other vegetables like bell peppers, snow peas, or green beans can be added but may change cooking time

Chicken thighs or breast can be used interchangeably with slight timing adjustments
