Description

Chocolate Chia Pudding Mousse is a rich, smooth, creamy make-ahead dessert made with chia seeds, cocoa, maple syrup, vanilla, and dairy-free milk. It takes just 5 minutes to prepare before chilling.


Ingredients

  • 2 cups dairy-free milk, such as cashew or almond milk
  • 1/2 cup chia seeds
  • 1/4 cup cacao powder or cocoa powder
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • Optional: coconut whipped cream, chocolate shavings, chopped nuts, strawberries, or other fruit

Instructions

  1. Add the milk, chia seeds, cacao or cocoa powder, maple syrup, and vanilla extract to a high-powered blender.
  2. Blend on high for about 1 minute, until completely smooth and creamy with no noticeable chia seed texture.
  3. Transfer the mixture to a covered bowl or individual serving containers.
  4. Refrigerate for at least 4 hours, until thick and set.
  5. Serve chilled with coconut whipped cream, chocolate shavings, chopped nuts, berries, or other desired toppings.

Notes

Use the full recipe quantity rather than halving it because a blender needs enough volume for the blades to process the mixture smoothly.

The recipe can be doubled or tripled for larger groups.

A high-powered blender creates the smoothest mousse-like consistency. A food processor may leave small pieces of chia seed.

The mixture thickens immediately after blending and becomes slightly firmer as it chills.

Regular dairy milk or coconut milk can replace almond or cashew milk.

Agave syrup can replace maple syrup.

For a thicker, tangier variation, replace some of the milk with Greek yogurt.

Add espresso powder for mocha flavor or protein powder for an extra protein boost.

Store covered in the refrigerator for 4 to 5 days. You can also freeze individual portions for several weeks or longer, then thaw them before serving.
