Description
Chocolate Chia Pudding is a rich, creamy, no-bake dessert made with cacao powder, maple syrup, milk, and chia seeds. It takes only 5 minutes to prepare and works well for breakfast, snacks, meal prep, or dessert.
Ingredients
2 tablespoons cacao powder or cocoa powder
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 cup dairy or dairy-free milk
1/4 cup chia seeds
Fresh fruit, chocolate shavings, or other toppings, optional
Instructions
1. Add the cacao powder, maple syrup, vanilla extract, milk, and chia seeds to a mixing bowl.
2. Whisk until the cacao powder dissolves and the mixture looks smooth.
3. Let the mixture rest for about 15 minutes so the chia seeds can begin absorbing the liquid.
4. Whisk or stir the mixture again to break up clumps and distribute the chia seeds evenly.
5. Cover the bowl and refrigerate for at least 4 hours or overnight, until the pudding becomes thick and creamy.
6. Stir the pudding before serving, then divide it between two glasses or bowls.
7. Top with fresh fruit, chocolate shavings, or other garnishes as desired.
Notes
If the pudding does not begin thickening after 10 to 15 minutes, the chia seeds may be too old. Replace them with fresh chia seeds.
For a smoother, mousse-like texture, blend all the ingredients before chilling.
Cacao powder and cocoa powder both work well in this recipe.
Honey or another liquid sweetener can replace the maple syrup.
You can use dairy milk or plant-based milk, including almond, oat, cashew, or banana milk.
Full-fat canned coconut milk creates a richer and thicker pudding. Add extra milk or water if you need to thin it.
Store the pudding in an airtight container in the refrigerator for 4 to 5 days.
Freeze the pudding in a freezer-safe container for up to 3 months. Thaw it overnight in the refrigerator and stir before serving.
