Description
Tender Corned Beef and Cabbage with baby potatoes, carrots, and green cabbage simmered together for a comforting one pot dinner.
Ingredients
- 3 to 3½ pounds corned beef brisket with included spice packet
- 2 bay leaves
- 1½ pounds baby potatoes
- 6 medium carrots, peeled and cut into 3-inch pieces
- 1 head green cabbage, cut into 2-inch wedges
- Horseradish sauce, optional for serving
- Chopped fresh parsley, optional for serving
Instructions
- Place the corned beef brisket, spice packet, and bay leaves in a large stockpot or Dutch oven. Cover the brisket with water.
- Bring the water to a boil. Then reduce the heat to a gentle simmer, cover, and cook for 2½ to 3 hours, about 50 minutes per pound, until the beef feels tender.
- Add the baby potatoes and carrots. Simmer for 10 to 15 minutes, until they become nearly tender.
- Add the cabbage wedges. Continue cooking for about 15 minutes, until the cabbage, potatoes, and carrots feel tender.
- Transfer the corned beef to a cutting board and let it rest briefly.
- Slice the corned beef against the grain.
- Serve the sliced corned beef with the potatoes, carrots, and cabbage. Add horseradish sauce and chopped fresh parsley if desired.
Notes
Slow cooker method: Place the brisket, spice packet, and bay leaves in the slow cooker and cover with water. Cook on low for 8 to 10 hours. Add the potatoes and carrots after about 4 hours, then add the cabbage roughly 2 hours before serving.
If the corned beef may taste too salty, soak it in cold water for 1 to 2 hours before cooking.
The included spice packet is optional. You can make your own blend with peppercorns, mustard seeds, bay leaves, and coriander.
Baby potatoes work well, although Yukon Gold or red potatoes also hold their shape nicely.
For a lower fat option, substitute corned turkey. Keep in mind that its flavor tastes milder.
Refrigerate cooled leftovers in airtight containers for 3 to 4 days. For better texture, store sliced beef separately from the vegetables.
Reheat gently on the stovetop with a little broth or water.
Freeze cooked corned beef without the cabbage for up to 3 months. Thaw it overnight in the refrigerator before reheating.
