Description

Fresh and colorful Cowboy Caviar made with black beans, black-eyed peas, sweet corn, tomatoes, avocado, peppers, cilantro, and a tangy lime dressing. Serve it as a dip, side dish, or topping for an easy dinner.


Ingredients

1 (15-ounce) can black beans, drained and rinsed

1 (15-ounce) can black-eyed peas, drained and rinsed

4 Roma tomatoes, seeded and diced

2 cups sweet corn, frozen, canned, or grilled

1 green bell pepper, diced

1 large avocado, diced

1 jalapeño pepper, seeded and diced

1/2 cup red onion, diced

1/2 cup fresh cilantro, chopped

1/3 cup extra-virgin olive oil

3 tablespoons fresh lime juice

1 teaspoon honey

2 garlic cloves, minced

1 teaspoon kosher salt

1/2 teaspoon ground cumin

1/4 teaspoon ground black pepper


Instructions

1. Combine the black beans, black-eyed peas, tomatoes, corn, bell pepper, avocado, jalapeño, red onion, and cilantro in a large bowl.

2. Whisk the olive oil, lime juice, honey, garlic, salt, cumin, and black pepper together in a separate small bowl.

3. Pour the dressing over the bean and vegetable mixture and gently stir until evenly coated.

4. Serve immediately or refrigerate for a few hours before serving to allow the flavors to develop further.

Notes

Store in an airtight container in the refrigerator for 3 to 4 days. Drain off excess liquid if the mixture becomes watery after storage.

For make-ahead preparation, chop and prepare everything except the avocado up to one day ahead and refrigerate. Add the avocado when assembling or serving.

Black-eyed peas are traditional, while black beans add variety. Pinto or navy beans can also be substituted.

Fresh lime juice gives the dressing a bright Southwest-style flavor, though vinegar can be used as an alternative.

No cooking is required unless you choose to grill the corn.
