8 oz linguine pasta

1 tbsp olive oil

13 oz Cajun-style andouille sausage, sliced

1 lb large raw shrimp, peeled and deveined

Salt and pepper to taste

2 tbsp butter

1 tbsp tomato paste

1 tbsp minced garlic

2 tsp Cajun seasoning

1 tsp dried oregano

1½ cups heavy cream

2 oz Parmesan cheese, grated

1 tbsp fresh parsley, chopped


Instructions

1. Cook pasta in salted boiling water until just tender, saving some of the cooking water before draining

2. Brown sliced sausage in a skillet with oil over medium-high heat until lightly crisp

3. Season shrimp with salt, pepper, and Cajun seasoning, then cook with sausage until shrimp are fully cooked; remove and set aside

4. In the same pan, melt butter and cook tomato paste briefly, then add garlic, Cajun seasoning, and oregano and cook until fragrant

5. Stir in heavy cream and Parmesan until melted and smooth, adding reserved pasta water gradually to loosen the sauce

6. Return pasta, shrimp, and sausage to the pan and toss until evenly coated in the sauce

7. Finish with chopped parsley and additional pepper before serving

Notes

Reserved pasta water helps adjust sauce thickness and improves texture

Sauce can be thinned with regular water if pasta water is unavailable

Spice level can be reduced by lowering Cajun seasoning or cayenne content

Shrimp can be omitted and sausage increased as an alternative

Adding fresh tomato on top can enhance flavor and color
