Description

Creamy Garlic Chicken is a comforting skillet dinner made with golden seared chicken breasts simmered in a rich garlic cream sauce. Whole garlic cloves caramelize in butter before blending into a smooth sauce with broth, cream, and Parmesan cheese for deep flavor.


Ingredients

2 large boneless skinless chicken breasts

Salt and black pepper

3 teaspoons Italian seasoning

1/3 cup all-purpose flour

4 tablespoons shredded Parmesan cheese

3 tablespoons olive oil

2 1/2 cups chicken broth

1 beef bouillon cube or 1 teaspoon Better Than Bouillon

1 teaspoon low-sodium soy sauce or Worcestershire sauce

1 teaspoon onion powder

1/2 teaspoon dried thyme

1/2 teaspoon mustard powder

3 tablespoons butter

10 whole garlic cloves

3 tablespoons flour for sauce

1/2 cup heavy cream

1/2 cup Parmesan cheese optional

Fresh parsley for garnish


Instructions

1. Mix chicken broth, bouillon cube, soy sauce, onion powder, mustard powder, and thyme in a measuring cup and set aside.

2. On a plate combine flour and Parmesan cheese for dredging.

3. Slice chicken breasts lengthwise into thinner cutlets and pound to about half inch thickness.

4. Pat chicken dry then season with salt, pepper, and Italian seasoning.

5. Coat chicken in the flour and Parmesan mixture and shake off excess.

6. Heat olive oil in a large skillet over medium high heat.

7. Sear chicken for 4 to 5 minutes per side until golden brown then remove and set aside.

8. Melt butter in the same skillet and scrape up browned bits from the pan.

9. Add whole garlic cloves and cook for 6 to 7 minutes until softened and lightly caramelized.

10. Stir in flour and cook briefly to remove the raw flour taste.

11. Gradually pour in the prepared broth mixture while stirring.

12. Add heavy cream and bring the sauce to a boil then reduce to a gentle simmer.

13. Stir in Parmesan cheese if using.

14. Return chicken and juices to the skillet and spoon sauce over the top.

15. Partially cover and simmer about 5 minutes until the chicken is heated through.

16. Garnish with parsley and serve.

Notes

Use 3 to 4 small chicken breasts instead of 2 large ones if needed.

Mushrooms can be sautéed separately and added to the sauce at the end for extra flavor and texture.

Caramelizing whole garlic cloves creates a mild slightly sweet garlic flavor instead of a sharp taste.
