Ingredients
4 (6-ounce) boneless, skinless chicken breasts
1 teaspoon Italian seasoning, or a mixture of oregano, thyme, basil, and rosemary
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
4 garlic cloves, minced
1/4 cup yellow onion, finely chopped
1/2 cup sun-dried tomatoes, thinly sliced
2 cups baby spinach
1 1/2 cups heavy cream
1/4 cup freshly grated Parmesan cheese
Instructions
1. Season the chicken breasts on both sides with Italian seasoning, salt, and pepper.
2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Sear the chicken for 3 to 4 minutes per side until golden, then transfer it to a plate.
3. Add the remaining tablespoon of olive oil and the chopped onion to the same skillet. Cook for 2 to 3 minutes until softened.
4. Stir in the sun-dried tomatoes and garlic. Cook for about 1 minute until fragrant.
5. Add the baby spinach and cook for about 1 minute, just until it begins to wilt.
6. Pour in the heavy cream and add the freshly grated Parmesan cheese. Stir well, then bring the sauce to a gentle simmer.
7. Return the chicken to the skillet and simmer for about 5 minutes, until the chicken cooks through and heats completely.
8. Remove the skillet from the heat and serve the Creamy Tuscan Chicken with rice, lentils, polenta, mashed potatoes, mashed cauliflower, or a salad.
Notes
Chicken thighs can replace chicken breasts.
White onion, yellow onion, or shallots can be used.
Coconut cream or homemade cashew cream can replace heavy cream for a dairy-free version.
