8 chicken thighs, bone-in and skin-on

2 tablespoons extra-virgin olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 1/2 teaspoons paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper


Instructions

1. Preheat oven to 425°F (220°C). Let the chicken approach room temperature, then thoroughly pat it dry to remove surface moisture.

2. Combine the garlic powder, onion powder, paprika, oregano, thyme, salt, and pepper in a small bowl.

3. Place chicken in a large bowl. Add olive oil and about two-thirds of the seasoning mixture. Coat thoroughly, including beneath the skin.

4. Arrange the chicken thighs skin-side up on a baking rack set over a baking sheet. Sprinkle the remaining seasoning over the tops.

5. Bake for 35 to 40 minutes, or until the internal temperature reaches about 170°F.

6. For crispier skin, broil for an additional 2 to 3 minutes while watching closely.

7. Rest the chicken for 5 minutes before serving.

Notes

Bone-in, skin-on chicken thighs work best because the skin helps retain moisture and turns crisp while the bone adds flavor.

Boneless, skinless chicken thighs can also work, although they will not develop the same crisp skin.

Dry the chicken thoroughly before seasoning because surface moisture can prevent the skin from crisping.

A baking rack improves airflow around the chicken and helps the thighs crisp more evenly. If you do not have a rack, use a roomy baking sheet and leave space between each piece.

You can change the herbs and spices to create different flavor profiles.

Dark-meat chicken thighs stay juicy at higher internal temperatures. Cooking them to about 170°F also helps soften connective tissue for tender meat.

Store leftovers in an airtight container in the refrigerator for 3 to 4 days or freeze for up to 3 months.

To restore crispness, reheat at 350°F for about 15 minutes in the oven or for 3 to 4 minutes in an air fryer.
