Description

Crock Pot Chicken, Potatoes and Green Beans is an easy one pot slow cooker dinner with tender chicken breasts, red potatoes, fresh green beans, and a bright garlic lemon seasoning.


Ingredients

1 ½ lbs boneless skinless chicken breasts

½ lb fresh green beans, trimmed

1 lb petite red potatoes, quartered

¼ cup olive oil

¼ cup lemon juice

3 tsp minced garlic

½ tsp ground black pepper

½ tsp salt

½ tsp onion powder

½ tsp Italian seasoning

½ tsp paprika


Instructions

1. Place the chicken breasts in the center of the slow cooker.

2. Arrange the trimmed green beans and quartered red potatoes around the chicken.

3. In a small bowl, mix olive oil, lemon juice, minced garlic, black pepper, salt, onion powder, Italian seasoning, and paprika until combined.

4. Pour the garlic lemon mixture evenly over the chicken, potatoes, and green beans.

5. Cover and cook on high for 2½ to 3½ hours or on low for 5 to 6 hours.

6. Check that the chicken reaches 165°F and the potatoes are tender before serving.

Notes

Cut potatoes into even pieces so they cook uniformly.

Green beans can be left whole or cut smaller if preferred.

For firmer green beans, add them during the final hour of cooking.

Chicken should reach an internal temperature of 165°F before serving.

Frozen green beans may be used but can release extra liquid.

Red potatoes work best because they hold their shape during slow cooking.

Chicken thighs can be substituted for chicken breasts.

Try Cajun seasoning, taco seasoning, or chicken seasoning blends for variation.

Onion or lemon zest can also be added for more flavor.

Store leftovers in an airtight container in the refrigerator for 4 to 5 days.

Freeze leftovers for up to 3 months.

Reheat gently in the microwave or slow cooker after thawing overnight in the refrigerator.
