Crockpot Boursin Chicken is a creamy slow cooker dinner made with tender chicken breasts, Boursin cheese, chicken broth, and simple seasonings. It has a rich garlic herb sauce and works beautifully with mashed potatoes, pasta, rice, or green vegetables.


Ingredients

1 wheel (5.2 ounces) Boursin cheese, room temperature, cut into pieces

1/4 cup dry white wine or chicken broth

3 tablespoons cornstarch

1 teaspoon garlic powder

1/2 teaspoon salt, plus more to taste

4 medium boneless, skinless chicken breasts, about 6 ounces each

Freshly cracked black pepper, to taste

Optional chopped chives for garnish


Instructions

1. Warm the chicken broth, Boursin cheese, and white wine together in the microwave or on the stovetop over low heat until the cheese melts.

2. Whisk until smooth, then mix in cornstarch, garlic powder, and salt until fully combined.

3. Place the chicken breasts in the slow cooker and season both sides with salt and black pepper.

4. Arrange the chicken in a single layer if possible, then pour the sauce evenly over the top.

5. Cover and cook on HIGH for 2 to 3 hours or LOW for 6 to 7 hours.

6. Check the thickest part of the chicken with a meat thermometer and remove once it reaches 160°F.

7. Let the chicken rest for 5 minutes until the internal temperature reaches 165°F.

8. Whisk the sauce again if needed, spoon it over the chicken, garnish with chives if desired, and serve warm.

Notes

Use a dry white wine such as sauvignon blanc or pinot grigio for best flavor.

Chicken broth can replace the wine if preferred.

Allow the Boursin cheese to sit at room temperature before heating to help prevent curdling or separation.

For lower sodium, use low-sodium broth and adjust salt after tasting the sauce.

Choose chicken breasts that are similar in size and thickness for even cooking.

For a keto version, replace the cornstarch with up to 1 1/2 teaspoons xanthan gum.

Any flavor of Boursin cheese can be used for variation.

A 6-quart slow cooker is recommended.

Chicken should reach a final safe internal temperature of 165°F before serving.
