Description

Hearty Crockpot Cheesy Potatoes with smoky beef kielbasa, tender potatoes, onions, and a creamy cheddar sauce. A cozy slow cooker dinner for busy nights, potlucks, and family meals.


Ingredients

12 oz beef kielbasa, sliced into 1/2-inch pieces

3 cans (14.5 oz each) diced potatoes, drained

1 cup heavy whipping cream

1/2 can cheddar cheese soup

1 cup chicken broth

2 tbsp melted butter

1 cup shredded cheddar cheese

1/2 cup chopped onions

1/2 tsp black pepper

1 tsp onion powder

1 tsp garlic powder


Instructions

1. Coat the slow cooker insert with nonstick spray.

2. Drain the potatoes thoroughly, then toss them with melted butter, black pepper, onion powder, and garlic powder.

3. Add the kielbasa, onions, heavy cream, chicken broth, and shredded cheddar cheese. Stir until combined.

4. Mix in the cheddar cheese soup until evenly distributed.

5. Cover and cook on High for 3 to 4 hours or Low for 5 to 6 hours, until the potatoes are tender.

6. For a thicker consistency, stir in a slurry made from 1 tsp cornstarch and 2 tsp water about 1 hour before cooking finishes.

7. Serve hot with preferred toppings.

Notes

For a soupier texture, add extra milk before cooking.

Frozen diced potatoes can be used instead of canned potatoes. Thaw first and use about a 32 oz bag.

Freshly shredded cheese melts more smoothly, though packaged shredded cheese can also be used.

Avoid Parmesan-type cheeses if possible, as they may create a grainy texture.

Top with extra cheese, fresh herbs, or red pepper flakes for additional flavor.

Store leftovers in the refrigerator for up to 4 days.

Reheat in the microwave or in an air fryer at 330°F for 4 to 5 minutes.

Colby Jack cheese may be substituted for cheddar.

Sweet, white, or red onions all work well.
