Creamy Crockpot Chicken Alfredo with tender chicken thighs, ziti pasta, parmesan cheese, and a rich slow cooker Alfredo sauce.
Ingredients
1 pound boneless skinless chicken thighs
2 1/2 cups heavy cream
2 cups low-sodium chicken broth
4 ounces cream cheese, cubed
4 tablespoons unsalted butter, cubed
1/2 teaspoon pepper
1 teaspoon salt
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons Italian seasoning
1 pound uncooked ziti pasta
1/2 cup grated parmesan cheese, plus extra for serving
Fresh chopped parsley
Additional salt and pepper to taste
Instructions
1. Place chicken, heavy cream, chicken broth, cream cheese, butter, salt, pepper, garlic powder, onion powder, and Italian seasoning into the slow cooker. Cover and cook on high for about 2 hours until the chicken is fully cooked and tender.
2. Remove the chicken, shred it, then return it to the slow cooker.
3. Stir in the uncooked pasta and parmesan cheese.
4. Continue cooking on high for about 30 minutes until the pasta is tender.
5. Taste and adjust seasoning if needed.
6. Serve hot with parsley and extra parmesan cheese.
Notes
Searing the chicken before slow cooking can improve flavor and help keep the meat juicy.
Extra cream or broth may be needed if the pasta absorbs too much liquid.
Cooking time may vary depending on the size and thickness of the chicken pieces.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freeze fully cooled leftovers in a freezer-safe container.
To reheat frozen Alfredo, bake covered at 350°F for 60 to 90 minutes until hot. Thawed pasta reheats in 30 to 60 minutes.
Add a splash of milk or cream while reheating if the sauce becomes too thick.
