Ingredients
1½ pounds boneless skinless chicken thighs
½ teaspoon kosher salt
½ teaspoon black pepper
1 bay leaf
1 teaspoon dried parsley
½ teaspoon dried rosemary
½ teaspoon dried thyme
½ teaspoon garlic powder
1¾ cups low-sodium chicken broth
1 carrot peeled and sliced
1 onion chopped
10.5 ounces cream of chicken soup
½ cup frozen peas
16.3 ounces refrigerated biscuit dough
Fresh parsley optional for garnish
Instructions
1. Season chicken with salt and pepper and place in the slow cooker
2. Add bay leaf, dried herbs, and garlic powder on top
3. Pour in chicken broth, carrot, onion, and cream of chicken soup, lightly mixing without disturbing the chicken
4. Cover and cook on high for about 3 to 4 hours until chicken is tender and fully cooked
5. Add frozen peas, optionally shred the chicken, and stir gently
6. Cut biscuit dough into small pieces, roll into balls, and place on top of the mixture
7. Cover and cook on high for 1 to 2 more hours until dumplings are fully cooked, keeping the lid closed as much as possible
8. Check doneness by cutting into a dumpling; it should be fluffy and not doughy
9. Adjust seasoning if needed and serve

If the mixture is too thin, cook uncovered on high to reduce or thicken with a butter flour roux or cornstarch slurry
Avoid overcooking or undercooking dumplings; they should be light, fluffy, and cooked through
Keep the lid closed while dumplings cook to trap steam for proper texture
Dumplings are done when firm yet soft and a toothpick inserted comes out clean
Store leftovers in the refrigerator up to 3 days
