Description

This Cucumber and Bell Pepper Salad is a crisp, colorful, and refreshing summer side dish that comes together in just 10 minutes. Fresh mini cucumbers and sweet bell peppers combine with chili crisp oil, ginger sesame dressing, and Everything But the Bagel seasoning for the perfect balance of sweet, savory, spicy, and crunchy flavors. Ingredients

3 to 4 mini cucumbers, thinly sliced

6 to 7 mini sweet bell peppers (red, orange, yellow), thinly sliced

2 tablespoons chili crisp oil

1/4 cup ginger sesame dressing

2 1/2 teaspoons Everything But the Bagel seasoning, or more to taste

1 cup cottage cheese (optional, for serving)


Instructions

1. Slice the mini cucumbers and mini sweet bell peppers into thin rounds.

2. Place the sliced vegetables into a large mixing bowl.

3. Add the chili crisp oil, ginger sesame dressing, and Everything But the Bagel seasoning.

4. Toss everything together until the vegetables are evenly coated.

5. Cover and refrigerate for about 30 minutes for the best flavor.

6. Serve chilled.

Notes

Use any Asian style sesame dressing if your preferred brand is unavailable.

Substitute another everything bagel seasoning blend if needed.
