Description
Creamy, crisp, and refreshing Cucumber Everything Bagel Salad with sour cream, red onion, vinegar, and savory everything bagel seasoning.
Ingredients
2 English cucumbers, thinly sliced, peeled and deseeded if preferred
1 teaspoon salt, plus extra to taste
1/2 cup sour cream
3 tablespoons everything bagel seasoning
2 teaspoons white vinegar
1/2 teaspoon black pepper, plus extra to taste
1/2 cup thinly sliced red onion
Instructions
1. Place the sliced cucumbers in a colander and toss with salt. Let them sit for 30 minutes to 1 hour so excess liquid drains out.
2. Rinse the cucumbers lightly, then press or pat dry to remove remaining moisture.
3. In a bowl, mix together the sour cream, everything bagel seasoning, vinegar, and black pepper until smooth.
4. Add the cucumbers and red onion to the dressing and stir until coated. Adjust seasoning with additional salt and pepper if needed.
5. Serve immediately or chill for at least 30 minutes before serving for better flavor.
Notes
Salting the cucumbers helps prevent the dressing from becoming watery.
Greek yogurt can be used instead of sour cream.
Red onion may be replaced with white onion if desired.
Everything bagel seasoning can be store bought or homemade.
The salad can be served right away or chilled for improved flavor.
Store refrigerated in an airtight container for up to 5 days.
Freezing is not recommended because the dairy dressing may separate.
