Description

A quick and refreshing cucumber tomato salad made with crisp cucumbers, juicy tomatoes, and a light tangy vinaigrette. Perfect for summer meals, barbecues, or a healthy side dish.


Ingredients

1 English cucumber sliced into thin half rounds

10 ounces grape or cherry tomatoes halved

1/2 small red onion thinly sliced

2 tablespoons olive oil

2 tablespoons red wine vinegar or balsamic vinegar

1 teaspoon honey

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh herbs such as dill parsley or basil optional


Instructions

1. Slice cucumber lengthwise and cut into thin half rounds

2. Slice the red onion thinly and soak in ice water if desired to reduce sharpness

3. Halve the tomatoes or chop if using larger ones

4. Combine cucumber tomatoes and red onion in a large bowl

5. Whisk together olive oil vinegar honey salt and pepper until blended

6. Pour dressing over vegetables and toss gently to coat evenly

7. Fold in fresh herbs if using

8. Serve immediately or chill for 30 to 60 minutes before serving

Notes

Soaking sliced onion in ice water reduces strong flavor

Fresh herbs add the best flavor and should not be skipped

Best served shortly after preparation for crisp texture

Can be stored for one day but vegetables will release liquid and soften
