Description

1 cup heavy whipping cream

4 tablespoons unsalted butter, room temperature

About ½ pound fresh strawberries

2 tablespoons heavy whipping cream (for glaze)

1.75 ounces dark chocolate, finely chopped (for glaze)

1 teaspoon corn syrup

1 tablespoon warm water


Instructions

1. Whisk together the flour, cocoa powder, and salt in a bowl.

2. In a separate bowl, beat softened butter and powdered sugar until light and fluffy. Mix in vanilla extract.

3. Gradually add dry ingredients and mix just until combined. Form dough into a ball, wrap, and chill for 30 minutes.

4. Preheat oven to 350°F and grease a 9-inch tart pan with removable bottom.

5. Press chilled dough evenly into the pan and up the sides. Trim edges.

6. Bake for 15 minutes, pressing gently if crust puffs. Cool completely.

7. Heat cream gently and pour over chopped dark chocolate. Stir until smooth.

8. Whisk in butter until glossy and fully combined.

9. Pour ganache into cooled crust and refrigerate 1 to 2 hours until set.

10. Arrange fresh strawberries over firm ganache.

11. Heat cream for glaze until just simmering and pour over chopped chocolate. Stir until smooth.

12. Mix in corn syrup and warm water. Drizzle glaze over strawberries before serving.

Chop chocolate finely so it melts evenly and prevents lumps.
