Description

This Easy Caprese Salad with Spinach combines juicy cherry tomatoes, creamy mozzarella pearls, tender baby spinach, fresh basil, olive oil, and balsamic glaze. It comes together in just 10 minutes and works well as a light lunch, picnic dish, or fresh Italian inspired side.


Ingredients

1 cup cherry tomatoes

4 cups baby spinach

4 fresh basil leaves, thinly sliced

1 cup mozzarella pearls

Salt, to taste

Black pepper, to taste

1/4 cup olive oil

2 tablespoons balsamic glaze, or more to taste


Instructions

1. Rinse the cherry tomatoes, baby spinach, and basil under cold water, then pat them dry.

2. Halve the cherry tomatoes if desired, thinly slice the basil, and drain the mozzarella pearls.

3. Combine the cherry tomatoes, spinach, basil, and mozzarella pearls in a large serving bowl.

4. Drizzle the salad with olive oil and balsamic glaze.

5. Gently toss until the ingredients are evenly coated.

6. Season with salt and black pepper to taste.
