Ingredients
1 cup bacon bits
8 large eggs
1 cup cottage cheese
1 1/4 cups shredded Colby Jack cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Cooking spray or oil for greasing
Instructions
1. Preheat the oven to 325°F and grease a 12-cup muffin tin.
2. Whisk the eggs in a large bowl until frothy. Add salt, pepper, and garlic powder.
3. Stir in cottage cheese, shredded Colby Jack, and bacon bits until combined.
4. Pour evenly into muffin cups, filling each about three-quarters full.
5. Place a shallow pan of hot water on the lower rack to create steam.
6. Bake for 23–25 minutes, until just set.
7. Cool slightly, then run a knife around each to release.
8. Serve warm, or refrigerate for later.
