Description
A fresh and easy cucumber mozzarella salad made with crisp cucumbers, juicy tomatoes, creamy mozzarella, and a light herb dressing. Perfect for a quick summer side dish.
Ingredients
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon dried oregano
1 tablespoon dried basil
Salt and pepper to taste
1 cucumber, peeled, lightly textured with a fork, and diced
1½ cups cherry tomatoes, cut into pieces
8 ounces fresh mozzarella, cut into chunks or small balls
½ large red onion, finely chopped
Instructions
1. Whisk together olive oil, balsamic vinegar, oregano, basil, salt, and pepper to create a dressing
2. Prepare the cucumber by peeling, lightly scraping the skin for texture, and cutting into small pieces
3. Add chopped cucumber, tomatoes, and onion into a bowl
4. Cut mozzarella into bite-sized pieces and mix into the vegetables
5. Pour the dressing over everything and toss gently until evenly coated
6. Let the salad rest for about 10 minutes before serving to allow flavors to blend

Letting the salad sit for about 10 minutes improves flavor as ingredients absorb the dressing
Onion can be omitted or adjusted based on preference
Fresh mozzarella pearls can be used instead of cutting larger pieces
