Ingredients

Scale

1/2 cup unsalted butter, melted

1/3 cup granulated sugar (67 g)

1/2 cup packed light brown sugar (100 g)

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon baking soda

1 1/2 cups all-purpose flour, spooned and leveled (186 g)

1 1/2 cups chocolate chips

1/2 to 3/4 cup Halloween sprinkles

Candy eyes, optional

Instructions

1. Mix melted butter, brown sugar, and granulated sugar until smooth.

2. Stir in the egg and vanilla extract.

3. Add flour, salt, and baking soda, then mix just until combined. Do not overmix.

4. Fold in the chocolate chips and Halloween sprinkles.

5. Scoop dough into 2-tablespoon portions onto a parchment-lined tray.

6. Cover and refrigerate for 1.5 to 2 hours, or up to 24 hours.

7. Preheat oven to 350°F (175°C).

8. Arrange chilled dough balls on a lined baking sheet about 2 inches apart.

9. Bake for 11 to 13 minutes, until the edges turn golden.

10. Immediately press candy eyes into the warm cookies if using.

11. Let cookies cool before serving.

Notes

Measure flour by spooning it into the measuring cup and leveling it off.

A cookie scoop helps create evenly sized cookies.

Chill the dough for at least 1.5 to 2 hours for the best texture and to reduce spreading.

The dough can be prepared up to 24 hours ahead.

This recipe makes about 18 to 20 cookies and can be doubled.

Store cookies in an airtight container at room temperature for 3 to 5 days.

Freeze baked or unbaked cookies for 2 to 3 months.

If using salted butter, reduce added salt to 1/4 teaspoon.

Dark brown sugar can replace light brown sugar.

Chocolate chips can be replaced with dark, milk, white chocolate, chopped chocolate, or Halloween M&Ms.

Frozen dough can be baked directly from frozen by adding about 5 extra minutes.
