Description

Easy Pickle de Gallo is a crisp, tangy pickle-packed twist on classic pico de gallo. Crunchy dill pickles, sweet onion, red bell pepper, garlic, and serrano or jalapeño create a fresh, chunky dip or topping that takes just 15 minutes to prep.


Ingredients

  • 24 oz baby dill pickles, finely diced (about 10 pickles)
  • 1/2 sweet yellow onion, finely diced
  • 1 red bell pepper, seeded and finely diced
  • 2 tbsp pickle brine from the jar
  • 1 garlic clove, minced
  • 1/2 tsp kosher salt
  • 1 serrano or jalapeño pepper, finely diced

Instructions

  1. Combine the diced pickles, sweet yellow onion, red bell pepper, serrano or jalapeño pepper, pickle brine, minced garlic, and kosher salt in a bowl.
  2. Mix everything thoroughly until the ingredients are evenly combined.
  3. Cover the bowl and refrigerate for at least 2 hours so the flavors can blend.
  4. Stir the Easy Pickle de Gallo again before serving.
  5. Serve cold with tortilla chips or crackers, or use it as a topping for burgers, hot dogs, sandwiches, chili, carne asada tacos, carnitas tacos, or birria tacos.

Notes

Dill pickle spears can replace baby dill pickles.

Either serrano or jalapeño works for the spicy pepper. The added pepper gives extra flavor and mild heat.

The mixture improves as it rests, so you can prepare it several hours or one day ahead.

Store leftovers covered in the refrigerator for about 3 to 4 days.
