Description

Easy Spiced Peach Bread is a moist quick bread made with fresh peaches, brown sugar, buttermilk, and warm spices like cinnamon, allspice, nutmeg, and cloves. A coarse sugar topping adds a crisp finish.


Ingredients

1 cup packed dark brown sugar

1 cup (2 sticks) unsalted butter, softened

3 large eggs, room temperature

1 3/4 cups cake flour or all-purpose flour

1 1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground allspice

1/2 tsp freshly grated nutmeg

1/4 tsp ground cloves

1/2 cup cultured buttermilk

2 cups diced peaches, unpeeled, about 3 small peaches

1 tsp coarse sparkling sugar


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving overhang for easy removal.

2. Beat the butter and brown sugar until very light and fluffy, about 5 minutes.

3. Add eggs one at a time, mixing well after each addition, then continue beating until the mixture is airy.

4. In a separate bowl, combine flour, baking powder, salt, cinnamon, allspice, nutmeg, and cloves.

5. Add the dry ingredients and buttermilk to the batter in alternating additions, starting and ending with the dry mixture. Mix just until combined.

6. Gently fold in the diced peaches.

7. Transfer batter to the prepared pan, smooth the top, and sprinkle with sparkling sugar.

8. Bake for 50–55 minutes, or until fully risen and a tester inserted near the center comes out without wet batter.

9. Cool in the pan for about 10 minutes, then lift out using the parchment and cool further before slicing.

Notes

If cake flour is unavailable, use all-purpose flour or make a substitute by removing 2 tablespoons from each cup of flour and replacing it with 2 tablespoons cornstarch, then sift well.

Frozen peaches may be used if thawed, drained thoroughly, and chopped.

Canned peaches can also be used if well drained.

Avoid overmixing the batter to keep the loaf tender.

Use ripe but firm peaches for best texture.

Peach skins can be left on for added color and flavor.

Dice peaches shortly before use to reduce discoloring.

Use a standard 9×5-inch loaf pan because the recipe makes a large loaf.

If the top browns too quickly during baking, loosely cover with foil near the end.
