Description

A refreshing and juicy peach watermelon salad with sweet summer fruit, crisp cucumbers, fresh mint, creamy feta, and savory red wine vinaigrette.

Ingredients

Scale

1 small seedless watermelon, cut into 1-inch cubes or melon balls

1 shallot, finely chopped

4 tablespoons torn fresh mint, plus extra for garnish

2 tablespoons olive oil

Kosher salt and black pepper, to taste

1 sheet fresh feta cheese, cubed, about 1/2 cup

2 yellow peaches, sliced

3 Persian cucumbers, sliced into 1/2-inch rounds

For the vinaigrette:

4 tablespoons olive oil

3 tablespoons red wine vinegar

3 cloves garlic, chopped

1 shallot, finely chopped

1 teaspoon dried oregano

Kosher salt and black pepper, to taste

Instructions

1. Mix the watermelon, chopped shallot, mint, olive oil, salt, and pepper in a large bowl. Chill for 1 to 3 hours so the watermelon absorbs the flavors.

2. Whisk together the olive oil, red wine vinegar, garlic, shallot, oregano, salt, and pepper until fully combined.

3. After marinating, add the sliced peaches, cucumbers, and feta to the watermelon mixture. Toss gently, transfer to a serving dish, drizzle with the vinaigrette, and finish with extra mint and seasoning if needed.

Notes

Marinating the watermelon improves flavor and helps the salad taste more vibrant.

The vinaigrette adds a savory contrast that balances the sweetness of the fruit.

Fresh feta packed in brine gives the best texture and flavor.

Best served cold and fresh shortly after assembling.

Yellow or red watermelon both work well.

Nectarines can replace peaches if preferred.
