Instructions
- `Preheat the oven to 425°F (220°C).
- Peel the carrots and cut them diagonally into 1 to 1 1/2-inch pieces. Halve thicker carrots lengthwise for even cooking.
- In a large mixing bowl, combine the carrots, honey, minced garlic, melted butter, olive oil, cinnamon, ginger, salt, and black pepper. Toss until the glaze coats the carrots evenly.
- Arrange the coated carrots in a single layer on a sturdy baking sheet. Pour any remaining glaze over the carrots.
- Roast for 20 to 25 minutes, turning the carrots halfway through cooking. Continue roasting until the carrots become tender and develop golden, caramelized edges.
- For deeper caramelization, place the carrots under the broiler for another 2 to 3 minutes. Watch closely to prevent the honey from burning.
- Transfer the roasted carrots to a serving dish. Sprinkle with fresh chopped parsley or thyme if desired, and serve warm.
Notes
Storage: Allow leftover carrots to cool, then transfer them to an airtight container. Refrigerate for 3 to 4 days.
Freezing: Store cooked carrots in a freezer-safe container for up to 3 months. Their texture may soften after thawing.
Reheating: Warm leftovers in the microwave until hot throughout. Alternatively, reheat in a 350°F oven until warm.
Make Ahead: Peel and slice carrots up to one day before cooking. Refrigerate them in an airtight container and add the glaze immediately before roasting.
Equipment: Use a sturdy, heavy-duty baking sheet, a mixing bowl, a sharp knife, and a cutting board.
Carrot Varieties: Standard orange carrots work well. Rainbow carrots add beautiful color to your holiday table.
Honey Substitutions: Replace honey with maple syrup if preferred. Clover honey and wildflower honey also work well.
Butter Alternative: Replace melted butter with an equal amount of ghee.
Caramelization Tip: Broil the carrots for an additional 2 to 3 minutes for deeper golden edges. Watch carefully.
Even Cooking: Cut carrots into similar sizes and avoid overcrowding the baking sheet.
Serving Suggestions: Pair with roasted turkey, chicken, ham, prime rib, beef tenderloin, steak, or baked salmon.
Best Texture: Serve shortly after roasting for the best caramelized edges and glossy coating.
Timing: Total time is approximately 25 to 30 minutes, plus 2 to 3 minutes if you use the optional broiling step.
