Description
Soft and chewy Fireworks Pudding Cookies made with vanilla pudding mix, brown sugar, patriotic M&M candies, and red and blue sprinkles. A fun 4th of July dessert for summer parties and festive gatherings.
Ingredients
½ cup (113g) unsalted butter, softened
¾ cup (150g) packed brown sugar
1 teaspoon vanilla extract
1 large egg
1 box (3.4 ounces) instant vanilla pudding mix, dry mix only
½ teaspoon baking soda
¼ teaspoon salt
1¼ cups (155g) all-purpose flour
¼ cup red and blue sprinkles
¾ cup patriotic M&M candies
Instructions
1. Beat the butter and brown sugar until creamy.
2. Mix in the egg and vanilla until smooth.
3. Add the pudding mix, baking soda, and salt.
4. Blend in the flour until a soft dough forms.
5. Fold in the sprinkles and M&Ms.
6. Scoop the dough into 2-tablespoon portions on a lined baking sheet.
7. Cover and refrigerate for at least 30 minutes.
8. Heat the oven to 350°F and line baking sheets with parchment or silicone mats.
9. Arrange chilled dough balls about 2 inches apart.
10. Bake for 9 to 11 minutes, until the edges are lightly golden while the centers stay soft.
11. Let the cookies cool on the baking sheet for 5 minutes.
12. Transfer the cookies to a wire rack and cool completely.
Notes
The dough must be chilled before baking.
If the cookies stay too rounded while baking, gently press them down partway through baking to help them spread.
Store cookies in an airtight container for up to 4 days.
Cookies can be frozen for up to 3 months.
Frozen cookie dough should be thawed before baking.
Different pudding flavors can be substituted to change the flavor profile.
Patriotic M&Ms and sprinkles can be replaced with any colors for different occasions.
