Description
A soft, chewy Fireworks Sugar Cookie Cake made with buttery vanilla dough, colorful M&Ms, sprinkles, and creamy vanilla frosting. Perfect for 4th of July parties.
Ingredients
¾ cup (170 g) unsalted butter, softened
¾ cup (150 g) granulated sugar
1 large egg
1 tablespoon vanilla extract
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cream of tartar
2 cups (248 g) all-purpose flour
1 cup M&Ms
½ cup jimmie sprinkles
3 tablespoons (38 g) unsalted butter, softened, for frosting
1½ cups powdered sugar
1 teaspoon vanilla extract, for frosting
⅙ teaspoon salt, for frosting
2 tablespoons heavy cream or milk
Extra sprinkles and candies, for decorating
Instructions
1. Heat the oven to 350°F. Line a 9-inch round pan and coat it with nonstick spray.
2. Cream the butter and sugar until smooth.
3. Mix in the egg and vanilla.
4. Add the baking soda, salt, and cream of tartar. Mix until combined.
5. Add the flour and mix until a soft dough forms.
6. Fold in the M&Ms and jimmie sprinkles.
7. Spread the dough evenly in the prepared pan. Add extra candies on top if desired.
8. Bake for 19 to 22 minutes, until the edges look lightly golden and the center still looks soft.
9. Cool the cookie cake completely so the center sets.
10. For the frosting, beat the softened butter until smooth.
11. Gradually mix in the powdered sugar.
12. Add the vanilla, salt, and a small amount of cream or milk.
13. Mix until smooth and spreadable. Add more liquid in small amounts if needed.
14. Spread or pipe the frosting over the cooled cookie cake.
15. Finish with extra sprinkles and candies, then slice and serve.
Notes
Bake slightly underdone for a softer texture since the cake continues to cook as it cools.
The dough should remain soft and tender rather than fully firm when removed from the oven.
Adjust frosting consistency gradually with small amounts of liquid to avoid making it too thin.
Store loosely covered for up to 2 days at room temperature.
