Description

This Fresh Corn Salad combines smoky grilled sweet corn, juicy tomatoes, crisp cucumber, red onion, fresh herbs, and a light apple cider dressing. It makes a colorful lunch, summer side dish, or make ahead recipe for cookouts and gatherings.


Ingredients

4 ears corn, husked and cleaned

1/4 cup olive oil, divided

1 cup cherry or grape tomatoes, quartered

1 English cucumber, sliced and quartered

1/2 medium red onion, diced

1/4 cup chopped fresh tender herbs, such as parsley, dill, cilantro, basil, mint, or tarragon

2 tablespoons apple cider vinegar

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

Optional: crumbled feta cheese


Instructions

1. Preheat a grill or grill pan to medium high heat.

2. Brush the corn with 2 tablespoons of olive oil.

3. Grill the corn for 8 to 10 minutes, turning occasionally, until lightly charred and tender.

4. Let the corn cool until you can handle it safely.

5. Slice the kernels from the cobs.

6. Combine the corn, tomatoes, cucumber, red onion, and fresh herbs in a large bowl.

7. Add the remaining olive oil, apple cider vinegar, kosher salt, and black pepper.

8. Toss gently until the vegetables are evenly coated.

9. Top with crumbled feta cheese if desired.

10. Serve immediately or chill before serving.

Notes

Use the freshest seasonal vegetables and herbs for the best flavor.

Any combination of soft herbs works well.

Feta cheese is optional, but it adds a creamy and salty finish.

Let the grilled corn cool slightly before removing the kernels.

Store leftovers in an airtight container in the refrigerator for 4 to 5 days.

Freezing is not recommended because the vegetables lose their texture after thawing.
