Description
Fresh Cucumber Caprese Salad combines crisp cucumber, juicy cherry tomatoes, creamy mozzarella, red onion, and a tangy herb balsamic dressing. It is fresh, quick, and perfect for lunch or summer sides.
Ingredients
1 tbsp dried basil or 3 tbsp fresh chopped basil
1 tbsp dried oregano
2 tbsp olive oil
1 tbsp balsamic vinegar
Pinch of salt
Pinch of pepper
1 cucumber, peeled, scored, and diced into 1/2 inch pieces
1 1/2 cups cherry tomatoes, quartered
8 oz fresh mozzarella, cut into small pieces or halved mozzarella balls
1/2 large red onion, finely chopped
Optional fresh basil leaves for garnish
Instructions
1. Mix the olive oil, balsamic vinegar, dried basil, oregano, salt, and pepper in a small bowl until combined.
2. Let the dressing sit while preparing the salad ingredients.
3. Dice the cucumber, quarter the cherry tomatoes, finely chop the red onion, and cut the mozzarella into bite-sized pieces if needed.
4. Combine all salad ingredients in a large bowl.
5. Pour the dressing over the salad and toss gently until evenly coated.
6. Let the salad rest for about 10 minutes before serving.
7. Garnish with fresh basil if desired.
Notes
Fresh basil can replace dried basil. Use about three times the amount.
A good-quality aged balsamic vinegar gives the best flavor.
Red onion can be reduced or omitted for a milder taste.
Fresh basil garnish is optional, but it adds aroma and freshness.
