Description

Fresh Watermelon Fruit Salad with juicy watermelon, berries, cherries, and a bright mint lime dressing. A light, refreshing lunch or summer side ready in 20 minutes.


Ingredients

For the mint lime dressing:

2 Tbsp fresh mint, thinly sliced or minced

1 Tbsp honey or agave

Zest of 1 lime, about 2 tsp

Juice of 1 lime, about 2 Tbsp

For the salad:

5 cups diced watermelon, 3/4 to 1 inch cubes

2 cups sliced or halved strawberries

1 cup pitted, halved cherries

1 cup blueberries

1 cup raspberries, or extra cherries or blueberries

Extra fresh mint for garnish


Instructions

1. Combine the mint, honey or agave, lime zest, and lime juice in a small bowl or jar. Whisk until blended.

2. Add the watermelon, strawberries, cherries, blueberries, and raspberries to a large bowl.

3. Pour the dressing over the fruit.

4. Gently toss until the fruit looks evenly coated, taking care not to crush the berries.

5. Finish with fresh mint leaves or thinly sliced mint before serving.

Notes

For the best texture and freshness, prepare the fruit and dressing ahead of time but combine them only 5 to 15 minutes before serving.

Fresh cherries can be replaced with red grapes.

Raspberries can be replaced with extra cherries, blueberries, or blackberries.

Fresh basil can be used instead of mint.

Leftovers can be blended into smoothies or frozen into popsicles.

Best served fresh.
