Description

Fresh, creamy, crunchy Frito Corn Salad with sweet corn, black beans, Rotel tomatoes, cheddar cheese, and crisp Fritos. Perfect for summer cookouts, potlucks, BBQs, and taco night.


Ingredients

2 (15-ounce) cans sweet corn, drained

1 (15-ounce) can black beans, drained

1 (10-ounce) can Rotel tomatoes, drained

1 bell pepper, diced

1 cup shredded cheddar cheese

1 (9.25-ounce) bag Fritos corn chips

2/3 cup sour cream

1 tablespoon extra virgin olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon ground cumin


Instructions

1. Whisk together the sour cream, olive oil, salt, black pepper, garlic powder, onion powder, and cumin until smooth.

2. In a large bowl, combine the drained corn, drained black beans, drained Rotel tomatoes, diced bell pepper, and shredded cheddar cheese.

3. Pour the creamy dressing over the corn mixture and stir until evenly coated.

4. Add the Fritos immediately before serving.

5. Gently fold in the Fritos so they stay crunchy, then serve right away.
