Ingredients
4 tablespoons butter
6 garlic cloves, minced
1 1/2 pounds large shrimp
Kosher salt, to taste
Ground black pepper, to taste
Juice of 1 lemon, about 3 tablespoons
2 tablespoons roughly chopped fresh parsley
Instructions
1. Melt the butter in a skillet over medium heat.
2. Add the minced garlic and cook for about 30 seconds until aromatic.
3. Add the shrimp and season with kosher salt and ground black pepper.
4. Cook the shrimp for 2 to 3 minutes per side until pink and opaque.
5. Remove the skillet from the heat.
6. Mix in the lemon juice and fresh parsley.
7. Serve the Garlic Butter Shrimp warm.
Notes
Avoid overcooking the shrimp because they can turn rubbery.
Refrigerate cooled leftovers in an airtight container for 3 to 4 days.
Freeze cooled leftovers in a freezer safe container or bag for up to 3 months.
For reheating, gently warm the shrimp in a skillet over low heat with a little butter or olive oil.
Avoid microwaving when possible because high heat can toughen the shrimp.
Quickly thaw frozen shrimp under cold running water for about 5 minutes.
Pat thawed shrimp thoroughly dry so they sear instead of steam.
You can replace fresh parsley with basil, cilantro, or tarragon.
Fresh or frozen shrimp both work well, and wild caught shrimp make a good choice when available.
Serve with mashed potatoes, rice, pasta, zucchini noodles, lettuce wraps, coleslaw, roasted asparagus, or grilled corn.
