Ingredients

1 1/2 lb steak, ribeye, sirloin, or filet mignon, cut into bite-size pieces

2 tsp kosher salt

1 tsp ground black pepper

1/2 tsp red pepper flakes

1 tbsp olive oil

4 tbsp butter

1 medium shallot, finely diced, about 1/4 cup

6 garlic cloves, minced

1/4 cup finely chopped fresh parsley, or another tender fresh herb such as oregano or thyme


Instructions

1. Pat the steak pieces dry, then season them with kosher salt, black pepper, and red pepper flakes.

2. Heat a large cast-iron skillet over medium-high heat.

3. Once the skillet gets hot, add the olive oil and wait until the oil shimmers.

4. Arrange the steak pieces in a single layer. Sear for about 1 to 2 minutes per side until browned.

5. Transfer the seared steak bites to a plate.

6. Lower the heat to medium-low. Add the butter, diced shallot, and minced garlic.

7. Cook the butter, shallot, and garlic together for about 1 minute while stirring.

8. Return the steak bites to the skillet and toss until the garlic butter mixture coats every piece.

9. Take the skillet off the heat.

10. Stir in the chopped parsley and serve immediately.

Notes

A cast-iron skillet gives the steak a strong sear, although a well-preheated stainless-steel pan also works.

For medium-rare to medium steak bites, aim for an internal temperature of about 125 to 130°F.

For well-done steak, cook the pieces for another 1 to 2 minutes per side while watching them closely to avoid overcooking.

Ribeye gives you richer marbling and flavor, while sirloin offers a leaner and more economical option.

Filet mignon or beef tenderloin works well when you want especially tender steak bites.

You can swap parsley for fresh thyme or oregano.

Adjust the red pepper flakes to suit your preferred heat level.

Serve the steak bites over mashed potatoes, mashed cauliflower, or rice with vegetables.

You can also add them to salads or tacos, or serve them as an appetizer with garlic aioli, chimichurri, or horseradish sauce.

Refrigerate cooled leftovers in an airtight container for 3 to 4 days.

For freezing, cool the steak completely and store it with any remaining garlic butter sauce in a freezer-safe container for up to 3 months.

Reheat gently in a skillet over medium heat with a little butter or olive oil. Avoid microwaving when possible because it can make the steak chewy.
