Ingredients
3 pounds sirloin steak, cut into 1 to 1½ inch bite size pieces
2 to 3 tablespoons olive oil, divided
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon garlic powder
6 to 8 tablespoons unsalted butter
6 garlic cloves, minced
3 tablespoons fresh parsley, chopped, for garnish
Instructions
1. Let the steak sit at room temperature for about 30 minutes, then pat it dry with paper towels.
2. Mix the salt, black pepper, cayenne pepper, and garlic powder in a small bowl.
3. Coat the steak pieces evenly with the seasoning mixture.
4. Heat 1 tablespoon of olive oil in a large skillet over medium high heat.
5. Add the steak in a single layer and sear it in batches for 3 to 5 minutes, turning until browned on all sides. Add more olive oil as needed.
6. Transfer each cooked batch of steak to a plate.
7. Reduce the heat to medium, then melt the butter in the skillet.
8. Add the minced garlic and cook for about 1 minute, stirring until fragrant.
9. Return the steak bites to the skillet and toss them until fully coated in the garlic butter.
10. Remove the skillet from the heat, garnish with chopped parsley, and serve immediately.
Notes
Use a tender, boneless steak such as sirloin, ribeye, strip steak, New York strip, or tenderloin.
Avoid stew meat because tougher cuts need a much longer cooking time.
Cook the steak in batches so each piece develops a proper crust.
A cast iron skillet works especially well for searing.
Choose well marbled beef for better tenderness and flavor.
Add fresh rosemary or thyme to the butter for extra flavor.
Add 1 to 2 teaspoons of Worcestershire sauce to the butter for a deeper savory taste.
For the air fryer method, cook the seasoned steak bites at 400°F for 8 to 10 minutes, shaking halfway through. Then toss them with the garlic butter.
Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
Reheat leftovers gently in a skillet over medium low heat with a small amount of butter.
Serve with mashed potatoes, rice, roasted vegetables, green beans, Brussels sprouts, sweet potatoes, or potato wedges.
For a party appetizer, serve the steak bites with toothpicks.
