Description
Greek Chicken Salad is a fresh Mediterranean lunch with juicy seasoned baked chicken, crisp cucumber, tomatoes, bell pepper, red onion, Kalamata olives, feta, avocado, and Greek salad dressing.
Ingredients
1 large cucumber, sliced and diced
1 pint cherry tomatoes, diced
1 green bell pepper, diced
1/2 red onion, thinly sliced
1/2 cup sliced Kalamata olives
4 ounces feta cheese, diced
1 recipe Greek salad dressing
1 avocado, peeled, pitted, and diced
2 boneless skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon paprika or smoked paprika
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
Salt and black pepper, to taste
Instructions
1. Preheat the oven to 425°F or 220°C.
2. Combine the paprika, basil, thyme, oregano, parsley, salt, and black pepper in a small bowl.
3. Coat the chicken with olive oil.
4. Rub the seasoning mixture evenly over both sides of the chicken.
5. Place the chicken in a baking dish.
6. Bake for 20 to 25 minutes, turning halfway through, until fully cooked.
7. Let the chicken rest briefly before slicing.
8. While the chicken cooks, combine the cucumber, tomatoes, bell pepper, onion, olives, and feta in a large bowl.
9. Toss the salad with the Greek salad dressing.
10. Divide the salad into servings.
11. Top each serving with sliced chicken and diced avocado.
12. Serve right away.
Notes
Half of one chicken breast is used per serving, but more chicken can be added for larger portions.
Homemade Greek salad dressing is recommended for the best flavor, though store-bought can be used if needed.
This salad contains no lettuce, so it works well for meal prep.
Store leftovers in the refrigerator for 4 to 5 days.
Leave out the avocado until just before serving to keep it fresh.
