Description

This Greek Salad combines crisp cucumber, juicy tomatoes, green bell pepper, red onion, Kalamata olives, and creamy feta with a tangy homemade lemon and oregano dressing. It takes only 5 minutes and works well for lunch, meal prep, or a fresh side dish.

Ingredients

Scale

1 large cucumber, diced

1 pint grape tomatoes, halved

1 green bell pepper, diced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, halved

4 ounces feta cheese, crumbled

Salt and black pepper, to taste

1/3 cup red wine vinegar

Juice of 1 lemon

1 teaspoon Dijon mustard

2 garlic cloves, minced

1/2 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup olive oil

Instructions

1. Combine the cucumber, tomatoes, bell pepper, red onion, Kalamata olives, and feta cheese in a large bowl.

2. In a separate bowl, whisk together the red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and black pepper.

3. Gradually pour in the olive oil while whisking continuously until the dressing looks smooth and well combined.

4. Pour the dressing over the salad and gently toss until every ingredient has an even coating.

5. Taste the Greek Salad and add extra salt or black pepper if needed.

6. Serve immediately for the freshest flavor and crispest texture.

Notes

For the freshest flavor, use high quality vegetables, Kalamata olives, feta cheese, and olive oil.

Cut the vegetables into large, even pieces for a traditional texture.

Prepare the dressing in advance and refrigerate it until needed.

For extra protein, pair the salad with cooked chicken, shrimp, steak, fish, or another preferred protein.

This salad contains no leafy greens, so it works well for meal prep.

Store leftovers in an airtight container in the refrigerator for 4 to 5 days.

For make ahead preparation, chop the vegetables 1 to 2 days ahead.

Store the vegetables and dressing separately, then combine them just before serving.

The salad has a crisp, fresh texture with a tangy, herb flavored dressing and creamy feta.
