Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup plain Greek yogurt, preferably 2%
  • 1/4 cup milk or water
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or oil

Instructions

  1. Whisk the flour, sugar, baking powder, and salt together in a small bowl.
  2. In a separate bowl, whisk the Greek yogurt, milk, eggs, vanilla extract, and melted butter until evenly combined.
  3. Add the dry mixture to the wet mixture and stir only until combined. Leave a few lumps in the batter.
  4. Preheat a lightly greased nonstick skillet over medium heat.
  5. Add about 1/4 cup batter to the skillet for each pancake.
  6. Cook for about 2 minutes, until bubbles appear and the edges begin to look dry.
  7. Flip each pancake and cook for another 1 to 2 minutes, until cooked through and golden.
  8. Lightly grease the pan again between batches as needed.
  9. Serve warm with butter, maple syrup, fruit, or your preferred toppings.

Notes

Do not overmix the batter. Leaving a few lumps helps maintain a light and fluffy texture.

Melted butter may firm up when mixed with colder wet ingredients. This is normal as long as the butter remains distributed throughout the mixture.

Other Greek yogurt fat percentages will also work. However, you may need to adjust the batter with a little extra milk or flour depending on the yogurt thickness.

The pancakes freeze well. Thaw frozen pancakes overnight in the refrigerator, then reheat them in a skillet over medium-low heat for about 3 minutes per side.

If you use sweetened vanilla Greek yogurt, omit the vanilla extract and consider reducing the sugar by about half.

For blueberry Greek Yogurt Pancakes, gently fold blueberries into the finished batter before cooking.

You can replace the sugar with honey. However, check the batter consistency because honey adds extra moisture.
