Description
Grilled Pineapple Salad + Creamy Citrus Dressing is a fresh summer salad with juicy grilled pineapple, charred corn, creamy avocado, blueberries, pepitas, and a bright citrus dressing.
Ingredients
Citrus Dressing:
1/2 cup fresh orange juice
1/4 cup fresh lemon juice
1 tablespoon unsweetened almond milk
1/4 cup fresh parsley
3/4 cup olive oil
1 tablespoon rice vinegar
1 tablespoon minced shallots
Pinch of kosher salt
Salad:
4 pineapple slices
1 sliced avocado
1 corn on the cob
1/2 cup pepitas
1 cup fresh blueberries
1 tablespoon olive oil
3 cups mixed greens
Instructions
1. Add orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and kosher salt to a blender.
2. Blend until smooth and creamy.
3. Preheat grill to medium high heat and clean the grates.
4. Brush pineapple slices lightly with olive oil.
5. Grill pineapple for about 2 minutes per side until caramelized.
6. Grill corn for about 5 minutes per side until lightly charred.
7. Let corn cool slightly, then slice kernels from the cob.
8. Divide mixed greens between two bowls.
9. Top greens with grilled pineapple, avocado, corn, pepitas, and blueberries.
10. Drizzle with creamy citrus dressing before serving.
Notes
Pineapple and corn can also be cooked in a hot cast iron skillet with olive oil until lightly charred.
For Whole30 or Paleo diets, leave out the corn.
Adjust dressing amount to taste.
Best served right after assembling for the freshest texture.
