1 pound baby potatoes, cut into 1.5-inch cubes

2 ears corn on the cob, cut into 5 to 6 rounds each

1 pound raw shrimp, peeled, deveined, and thawed

12 ounces Andouille smoked sausage, cut into 2-inch pieces

1 small yellow onion, thinly sliced

4 garlic cloves, minced

4 tablespoons melted butter

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons Old Bay seasoning

Lemon slices, for garnish

Fresh chopped parsley, for garnish


Instructions

1. Preheat grill or oven to 400°F. Cut 4 large sheets of heavy-duty foil.

2. Boil potatoes and corn in salted water for about 10 minutes until slightly tender, then drain.

3. In a large bowl, combine shrimp, sausage, onion, garlic, potatoes, and corn. Pour in melted butter and season with salt, pepper, and Old Bay seasoning. Toss well.

4. Divide mixture evenly between foil sheets and seal packets tightly.

5. For grilling, cook packets directly on the grill for about 15 minutes, flipping once halfway through.

6. For oven cooking, place packets on a baking sheet and bake for about 15 minutes.

7. Carefully open packets and garnish with lemon slices and parsley before serving.

Use heavy-duty foil to prevent tearing during cooking.

Do not overfill the packets so they can seal properly.

Flip packets halfway through grilling for even cooking.
