This Ground Beef Zucchini Bake is a hearty, low carb dinner made with seasoned beef, tender zucchini, marinara sauce, and melted mozzarella cheese. It is a simple one dish meal that is perfect for busy weeknights and satisfying for the whole family.
Ingredients
1½ lbs zucchini, sliced into rounds and salted
1 tablespoon olive oil
1 medium onion, diced
8 oz mushrooms, diced
Salt, divided
Garlic powder, divided
Onion powder, divided
1 lb ground beef
Paprika
1 cup marinara sauce
1½ cups shredded mozzarella cheese
Instructions
1. Preheat oven to 400°F
2. Slice zucchini, salt it, and let it sit to remove moisture, then pat dry
3. Heat olive oil in a pan and cook diced onion until softened
4. Add mushrooms and seasonings, cook until tender, then set aside
5. In the same pan, cook ground beef until browned, breaking it apart
6. Season the beef with salt, garlic powder, onion powder, and paprika
7. Combine zucchini, cooked vegetables, beef, marinara sauce, and most of the cheese in a baking dish
8. Mix well and spread evenly
9. Bake until heated through
10. Add remaining cheese on top and continue baking until melted and bubbly
Notes
Store leftovers in a sealed container in the refrigerator for up to 3 to 4 days
You can substitute ground beef with turkey, chicken, pork, or lamb
Salting and drying zucchini helps prevent excess moisture
