Ingredients
1 lb ground turkey
2 medium zucchini, chopped
1 bell pepper, chopped
1/2 onion, chopped
1 teaspoon minced garlic
1 1/2 tablespoons olive or avocado oil
2 tablespoons tomato paste
1/2 cup water
Salt to taste
Black pepper to taste
Chili powder to taste
Paprika to taste
Dried oregano to taste
Dried basil to taste
Garlic powder to taste
Onion powder to taste
Instructions
1. Heat oil in a large skillet over medium heat and cook zucchini, onion, and bell pepper until slightly softened, then remove and set aside
2. In the same skillet, cook ground turkey, breaking it apart until fully browned
3. Add minced garlic and all spices, stirring well to coat the turkey evenly
4. Return vegetables to the skillet and mix in tomato paste and water
5. Stir everything together and let simmer until vegetables are tender and flavors combine
6. Taste and adjust seasoning as needed before serving
Notes
Substitute ground turkey with ground chicken or beef if desired
Add or swap vegetables based on what you have on hand
Cook zucchini until just tender to avoid a mushy texture
This dish stores well in the refrigerator for up to 3 to 4 days
Reheat in a skillet with a splash of water to keep it moist
Freezing is not recommended due to zucchini texture
