Ingredients
Cookies:
1 tsp mint extract
1/2 tsp salt
1/4 cup unsweetened cocoa powder
1 3/4 cups almond flour
1/2 cup confectioners sugar substitute such as Swerve
1 egg
1/2 cup softened butter room temperature 68 to 70 F
Coating:
1 cup confectioners sugar substitute for rolling
Instructions
1. Cream butter in a mixer for a few minutes until creamy
2. Add 1/2 cup sugar substitute and beat until fluffy
3. Mix in the egg and mint extract and beat until smooth
4. In a bowl combine almond flour salt and cocoa powder
5. Gradually add dry mix to the wet mix and beat until a dough forms
6. If dough feels dry add water one tablespoon at a time
7. Roll dough into 1 inch balls and place on a parchment lined sheet
8. Preheat oven to 325 F
9. Bake for about 12 minutes until firm to the touch
10. Let cookies cool for 5 minutes on the sheet
11. Roll warm cookies in the remaining sugar substitute
12. Cool completely before serving
