Healthy Marinated White Beans are fresh, vibrant, and packed with Mediterranean-style flavor. Creamy white beans combine with roasted red peppers, fresh herbs, shallot, garlic, lemon, and extra-virgin olive oil for an easy protein- and fiber-rich lunch.


Ingredients

2 (15-ounce) cans white beans, drained and rinsed

1/2 cup chopped fresh herbs, such as parsley, cilantro, basil, dill, tarragon, or mint

2 roasted red peppers, finely diced

1/3 cup finely diced shallot

2 garlic cloves, minced

1/2 cup extra-virgin olive oil

1 lemon, zested and juiced, about 3 tablespoons juice and 1 teaspoon zest

1/2 teaspoon kosher salt

1/4 teaspoon red pepper flakes

Ground black pepper, to taste


Instructions

1. Combine the drained and rinsed white beans, fresh herbs, roasted red peppers, shallot, garlic, olive oil, lemon juice, lemon zest, kosher salt, red pepper flakes, and black pepper in a large bowl.

2. Mix gently until all of the beans and vegetables are evenly coated with the marinade.

3. Cover the bowl and refrigerate for at least 2 hours. For deeper flavor, refrigerate overnight.

4. Toss the marinated white beans again before serving.

5. Serve on their own, over toast, added to leafy salads, alongside grilled meat, chicken, or shrimp, or spooned onto crostini for a charcuterie board.

6. Store leftovers in a sealed container in the refrigerator.

Notes

Refrigerate leftovers for 3 to 4 days.

Navy beans work especially well because their smaller size and firm texture help them retain their shape.

Cannellini beans, Great Northern beans, or butter beans can replace navy beans.

Fresh herbs are flexible, so mix or change them according to your preference.

Roasted red peppers add sweetness and smokiness, while shallot adds a pleasant crunch.

Marinate the beans for at least 2 hours. For deeper flavor, leave them overnight.

Toss again before serving because the marinade can settle at the bottom.
