Description

Creamy, savory Healthy Spinach Artichoke Dip made with soaked cashews, spinach, artichoke hearts, garlic, and mayonnaise. This warm dairy-free dip comes out rich, bubbly, and lightly golden, making it great with chips, crackers, or fresh vegetables.


Ingredients

1 cup raw cashews, soaked overnight

1 1/4 cups mayonnaise

1/4 cup water

16 oz frozen spinach, thawed and thoroughly drained

1 (13.5-oz) jar artichoke hearts, drained and chopped

1/3 cup finely chopped yellow onion

4 garlic cloves, minced

1/2 tsp kosher salt

1/2 tsp ground black pepper


Instructions

1. Preheat oven to 400°F (200°C).

2. Drain the soaked cashews, then add them to a food processor with the mayonnaise and water.

3. Process for 1 to 2 minutes until completely smooth and creamy.

4. Transfer the cashew mixture to a large bowl.

5. Add the drained spinach, chopped artichoke hearts, yellow onion, garlic, kosher salt, and black pepper.

6. Stir until everything combines evenly.

7. Spoon the mixture into an oven-safe baking dish and spread it evenly.

8. Bake for about 20 minutes, until hot, bubbly, and lightly golden.

9. Serve warm with tortilla chips, crackers, cucumber slices, celery, bell peppers, or other vegetables.

Notes

Remove as much liquid as possible from the thawed spinach and artichoke hearts to prevent a watery dip.

For a fully vegan version, use vegan mayonnaise.

Fresh spinach can replace frozen spinach. Steam it, cool it in ice water, then squeeze it very dry before using.

Canned or jarred artichoke hearts both work.

If dairy is acceptable, add 4 oz soft goat cheese for extra creaminess.

You can assemble the dip, cover it, and refrigerate it for up to 1 day before baking.

Store leftovers in an airtight container in the refrigerator for 3 to 4 days.

Reheat leftovers until warm before serving.

You can freeze the dip for up to 3 months.
