Description

2 tablespoons olive oil, divided

1/2 lb ground turkey

1.5 tablespoons taco seasoning

Salt and pepper to taste

3 to 4 large eggs

1/4 cup 2% to 4% cottage cheese

1 tablespoon butter

1 cup shredded potatoes

Optional toppings: chopped chives or parsley, avocado, Mexican-style shredded cheese, chopped tomatoes, or salsa


Instructions

1. Heat a skillet over medium heat with 1/2 tablespoon olive oil. Add the ground turkey, break it into crumbles, season with taco seasoning, and cook until no pink remains. Adjust salt and pepper as needed.

2. Whisk the eggs with cottage cheese and a little salt and pepper.

3. Melt the butter in a skillet over medium-low heat. Add the egg mixture and gently fold while cooking until the eggs look set and fluffy.

4. Wipe out the turkey skillet. Add the remaining olive oil and heat over medium.

5. Squeeze excess moisture from the shredded potatoes. Add them to the hot pan, season with salt and pepper, and press them into an even layer.

6. Cook the potatoes for 4 to 5 minutes before breaking them up and flipping. Continue cooking until golden and crisp.

7. Divide the eggs, turkey, and potatoes between bowls. Finish with your desired toppings and serve.

Notes

Ground turkey can be replaced with ground beef, chicken, sausage, precooked breakfast sausage, or leftover cooked meat.

Whole eggs can be swapped for egg whites for a lower-calorie option.

Shredded potatoes can be replaced with shredded sweet potatoes, hash browns, breakfast potatoes, cubed sweet potatoes, or leftover cooked potatoes.

For a dairy-free version, omit the cottage cheese and use vegan butter.
