Description

This Honey Lime Basil Peach Fruit Salad is a quick, refreshing summer dish with juicy peaches, berries, pomegranate, fresh basil, honey, and lime. It comes together in 10 minutes with no cooking required.

Ingredients

Scale

4 large ripe but still firm yellow peaches, sliced

1 cup blackberries

3/4 cup blueberries

Seeds from 1 medium pomegranate

6 large basil leaves, sliced into thin ribbons

1 to 2 teaspoons honey

Juice from 1/2 lime

Instructions

1. Combine the sliced peaches, blackberries, blueberries, pomegranate seeds, and basil in a large bowl.

2. Pour honey and fresh lime juice over the fruit.

3. Gently mix until everything is lightly coated.

4. Serve immediately or chilled.

Notes

Best made with ripe but firm peaches to prevent mushiness.

Lime juice helps keep the fruit fresh and helps prevent browning.

This salad can be prepared up to one day ahead, but add the basil just before serving.

Store leftovers in an airtight container in the refrigerator for 2 to 4 days.

You can customize it with strawberries, cherries, nectarines, mint, maple syrup, or agave.
