Description

Learn how to make chia pudding with just 4 simple ingredients and 5 minutes of prep. This creamy, healthy, no-cook breakfast is perfect for meal prep, with dairy-free and vegan options.

Ingredients

Scale
  • For 1 Serving:
  • ½ cup milk (dairy or dairy-free)
  • 2 tablespoons chia seeds
  • 1 teaspoon maple syrup
  • ½ teaspoon vanilla extract
  • Optional: Fresh fruit, nuts, and seeds
  • For 4 Servings:
  • 2 cups milk (dairy or dairy-free)
  • ½ cup chia seeds
  • 1 to 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Optional: Fresh fruit, nuts, and seeds

Instructions

  1. Pour the milk into a bowl or jar. Add the chia seeds, maple syrup, and vanilla extract. Stir thoroughly until the seeds spread evenly throughout the milk.
  2. Let the mixture rest undisturbed for approximately 10 minutes so the chia seeds absorb liquid and begin thickening.
  3. Stir the mixture again to break up clumps and create a smooth, even consistency.
  4. Cover the container and refrigerate for at least 1 hour. For thicker, creamier pudding, refrigerate for several hours or overnight.
  5. Stir the chilled pudding before serving. Add fresh berries, seasonal fruit, nuts, seeds, cinnamon, or your favorite toppings. Enjoy cold.

Notes

Chia Seed Ratio: Use 2 tablespoons chia seeds for every ½ cup milk. For four servings, use ½ cup chia seeds and 2 cups milk.

Milk Options: Regular dairy milk, almond milk, oat milk, and cashew milk all work well.

Sweetener Options: Replace maple syrup with honey or another sweetener. You can also omit the sweetener.

Prevent Clumps: Stir immediately after mixing, then stir again after 10 minutes.

Thicker Pudding: Refrigerate for several hours or overnight.

Thinner Pudding: Gradually add extra milk until you reach your preferred consistency.

Runny Pudding: Add a small amount of chia seeds, mix thoroughly, and refrigerate longer.

Freshness Tip: If the seeds show little thickening after approximately 15 minutes, try a fresh package of chia seeds.

Chia Seed Types: Black and white chia seeds work interchangeably and provide comparable nutritional benefits.

Smooth Texture: Blend the ingredients in a high-powered blender for a mousse-like consistency.

Fruit Layers: Puree fresh strawberries and spoon them beneath the prepared pudding.

Flavor Variations: Try blueberry, chocolate, peanut butter and jelly, pumpkin pie, eggnog, or pomegranate parfait.

Extra Flavor: Add cinnamon, cardamom, cacao powder, fresh berries, nuts, or seeds.

Meal Prep: Divide the pudding into individual covered jars for convenient breakfasts.

Refrigerator Storage: Store in airtight containers in the refrigerator for approximately 1 week.

Freezer Storage: Freeze individual servings for several weeks or longer. Thaw overnight in the refrigerator.

Serving Suggestion: Enjoy chilled with fresh or frozen berries, fruit puree, nuts, seeds, or warming spices.

Dietary Tip: Choose plant-based milk and maple syrup for a vegan version.

Nutrition: Values are approximate and exclude optional toppings. Nutrition varies according to the milk and sweetener.
