Jalapeno Peach Chicken is a sweet, spicy, and savory skillet dinner made with tender chicken thighs, juicy peaches, jalapeno slices, and a tangy peach glaze.
Ingredients
2 yellow peaches, pitted and sliced
½ cup (160 g) peach preserves
1 tablespoon extra virgin olive oil
1 teaspoon soy sauce
1 teaspoon apple cider vinegar
1 teaspoon Dijon mustard
½ teaspoon garlic, minced
½ teaspoon kosher salt
⅛ teaspoon black pepper
⅛ teaspoon red pepper flakes
2 pounds boneless, skinless chicken thighs
1 teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon chili powder
2 tablespoons extra virgin olive oil
1 medium jalapeno pepper, thinly sliced
Instructions
1. Mix peach preserves, 1 tablespoon olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, ½ teaspoon kosher salt, ⅛ teaspoon black pepper, and red pepper flakes in a bowl until smooth. Set aside.
2. Pat the chicken dry. Season evenly with 1 teaspoon kosher salt, ½ teaspoon black pepper, and chili powder.
3. Heat 2 tablespoons olive oil in a skillet over medium heat.
4. Cook the chicken for about 5 minutes per side. Lower the heat after flipping and cook until the chicken reaches 165°F.
5. Remove the chicken from the skillet and keep warm.
6. In the same pan, cook the sliced jalapeno for a few minutes.
7. Add the sliced peaches and cook until slightly softened.
8. Pour in the prepared peach glaze and stir to coat the peaches and jalapeno evenly.
9. Return the chicken to the pan. Spoon the sauce over the chicken.
10. Cook briefly until heated through, then serve warm.
Notes
Adjust the spice level by removing jalapeno seeds for less heat or adding more peppers for extra spice.
Chicken breasts can be used instead of thighs, but cooking time may vary.
Peach jam or jelly can replace peach preserves.
Fresh peaches give the best texture, but canned or frozen peaches can be used with slight texture changes.
Store leftovers in the refrigerator for 3 to 4 days.
Freeze for 2 to 3 months.
Reheat in the microwave, skillet, or oven at 350°F. Add a little liquid to help keep the chicken moist.
